One breakfast favorite no matter the season is breakfast burritos, and it's one of my meal prep favorites! There's nothing better than the smell of potatoes, peppers, and onions combining flavors in the skillet. Add to that the aroma of pork green chili simmering, and the sounds of girls giggling while playing school, and you have the perfect prepping environment.
My favorite breakfast burrito has silky scrambled eggs, crispy, diced potatoes, green peppers, onions, garlic, cheddar cheese, and fresh pork green chili (for the spicy ones) in them. Of course, you can add whatever you want to spice or flavor it up! Some other combinations I like include adding bacon, sausage, spinach, mozzarella, gouda, cotija, chorizo, salsa, and so many other options.
Another great aspect of these burritos is that they are freezable! I like to make at least a dozen or baker's dozen so that more than just myself can enjoy them all week long. How many will you make?
